Recipe idea: Autumn almond and pear sponge roll
Ingredients sponge roll:
- 70 g flour
- 30 g cocoa
- 40 g ground almonds
- 100 g sugar
- 20 g vanilla sugar
- 5 eggs
Cream:
- 200 g cold whipped cream 30%
- 250 g mascarpone (chilled)
- 2 tbsp icing sugar
Filling ingredients:
- 4 pears
- 2 tbsp cinnamon
- chocolate
- sliced almonds
And this is how it works:
- Preheat the oven to 175 degrees.
- Beat the eggs with the sugar and vanilla sugar on the highest setting of the food processor until frothy. Sieve the flour and cocoa, add the ground almonds. Set the speed of the food processor to 1 and slowly fold in the flour mixture.
- Line the baking tray with baking paper and spread the batter. Bake for approx. 20-25 minutes.
- Peel and chop the pears. Melt some butter in a pan, add the pears and mix with the cinnamon. Sauté the fruit briefly and leave to cool.
- Remove the sponge cake from the oven and roll up. Put to one side.
- For the cream, whip the ingredients on the highest setting.
- Roll out the sponge, spread with cream (leave some cream for the decoration) and place the pears in the centre. Roll into a roll.
- Decorate with melted chocolate and almonds.
