Professional sommeliers are highly knowledgeable about wine aging, storage, and serving temperatures. Sommeliers from around the world recommend different serving temperatures for white and red wines. For example, a Prosecco is best enjoyed crisp and fresh at 6 °C, while a Riesling is best served at 8 °C and a mature, full-bodied Chardonnay reveals its secrets at 10–12 °C.

In the past, red wine was served at room temperature, which back then meant 17–18 °C. Today, room temperature is around 21 °C. At this temperature, red wine quickly loses its character and vibrancy. When slightly chilled, red wine remains fresh on the palate and thus retains its original quality for longer. To achieve the correct serving temperature, wine coolers are used in many restaurants and private households.
