For the dough:

  • 250ml lukewarm milk
  • 2 eggs
  • 50g soft butter
  • 100g sugar
  • 1/2 yeast cube
  • pinch of salt
  • 550g flour

Other ingredients:

  • Jam of your choice
  • powdered sugar

Preparation:

  1. Pour the lukewarm milk into a large bowl, add the yeast and sugar and mix everything together well.
  2. Leave the milk mixture to stand for 10 minutes until the yeast has melted and then add the remaining ingredients and knead into a dough. The dough is very sticky at first, but changes after it has risen.
  3. Cover the dough with a tea towel and leave to rise for 1-2 hours until the dough has doubled in size. After the waiting time, divide the dough into equal pieces and shape into balls. For the flower Berliners, flatten the balls a little and cut into them like a flower.
  4. Leave the balls to rise for another 20-30 minutes.
  5. Set the induction hob to 160 degrees and heat approx. 1 liter of oil.
  6. Now fry the doughnuts with the lid closed for approx. 3-4 minutes, then turn them over and bake in the open pan for another 1-2 minutes. This will create the desired light-colored ring around the doughnuts.
  7. Leave the finished doughnuts to cool completely and fill using a piping bag.
  8. Dust with a little powdered sugar at the end and serve.
