Pumpkin time: great recipes for the fall classic
Autumn is pumpkin time: whether small or large, speckled or plain, pumpkins in various shapes and colors are available almost everywhere from September to November. There are more than 800 varieties worldwide and countless ways to prepare this healthy vegetable. Today we present our favorite recipes - from liquid to sweet to savory.
Fun fact: Did you know that, botanically speaking, pumpkins are actually berries? So it's perfect for delicious waffles, brownies and much more!

Recipe idea: Sweet pumpkin waffles with cinnamon ice cream

Ingredients (for approx. 4 waffles):
- 300 g flour
- 100 g soft butter
- 4 eggs
- 250 ml milk
- 250 g pumpkin puree
- 1 vanilla pod
- 1 teaspoon cinnamon, 1 teaspoon pumpkin spice
- 50 g sugar/maple syrup
- 1 ½ tbsp baking powder, 1 pinch of salt
Preparation:
- Chop up the rolled oats and bananas.
- Add the remaining ingredients and mix well.
Tip: Top the finished waffles with quark and fruit of your choice. The waffles go wonderfully with cinnamon ice cream and a pumpkin spice latte.
Recipe idea: Pumpkin brownies

For the pumpkin cream cheese cream:
- 120 g cooked pumpkin (e.g. Hokkaido)
- 200 g cream cheese
- 50 g soft butter
- 80 g sugar
- 1 egg
- 1 tsp cinnamon
For the brownie base:
- 200 g melted chocolate
- 120 g soft butter
- 120 g flour
- 100 g sugar
- 2 eggs
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- pinch of salt
- Pecans to taste
Preparation:
- Cook the pumpkin for approx. 10-15 minutes until it is nice and soft and leave to cool.
- Then place the cooked pumpkin in the Chop & Go with the remaining ingredients for the cream cheese and blend until smooth.
- For the brownie base, mix all the ingredients together and pour into a mold.
- Spread the cream cheese over it, make a pattern with a knife and sprinkle the pecans on top.
- Bake in the oven at 180 degrees for approx. 40-45 minutes.
Recipe idea: Pumpkin Spice Latte

Ingredients:
- 1 teaspoon pumpkin puree
- 1 pinch of pumpkin spice
- 1 latte macchiato (approx. 250 ml)
Preparation:
- Pour the pumpkin puree into a glass.
- Add the pumpkin spice and mix well.
- Carefully pour the latte macchiato into the glass and stir in the pumpkin puree.
Optional: Garnish with a little frothed milk and a pinch of pumpkin spice. Enjoy!

Recipe idea: Pumpkin and feta pasta
Ingredients:
- 400 g Hokkaido pumpkin
- 1 red onion
- 1 carrot
- ½ red bell pepper
- 100 g feta cheese
- 6-7 cherry tomatoes
- 1 clove of garlic
- olive oil
- 50 ml cooking cream
Spices: Salt & pepper, nutmeg, parsley
And it's as simple as this:
- Place all the ingredients, except for the cooking cream, roughly chopped in a baking dish and bake at 180 degrees for about 30 minutes (the baking time may vary depending on the oven).
- Then add the baked ingredients to the Chop & Go together with the cooking cream and a ladle of pasta water and blend to the desired consistency.
- Enjoy this creamy, autumnal sauce with your favorite pasta!
Recipe idea: Chicken breast fillets stuffed with pumpkin and mozzarella
With the Airfry & Steam 700 from CASO Design, this recipe is particularly successful - juicy, crispy and prepared in no time at all.
Ingredients for 4 people:
For the filling:
- 150 g pumpkin, roughly chopped
- 1 tsp olive oil
- sea salt
- 40 g grated cheese
- 1 tbsp crème fraîche
- salt, pepper
- 1 sprig of fresh thyme, chopped
For the marinade:
- 2 tbsp olive oil
- 1 ½ tsp smoked paprika powder
- 1 tsp salt
- ½ tsp pepper
Also:
- 1 ball of mozzarella
Preparation:
- Mix the pumpkin with olive oil and a little sea salt and cook in the Airfry & Steam 700 at 200 degrees for approx. 10 minutes. Then leave to cool.
- Finely mix the cooked pumpkin with the other ingredients for the filling in a food processor.
- Cut the chicken breast fillets lengthwise (do not cut through) and stuff with the pumpkin filling.
- Mix all the ingredients for the marinade and brush the stuffed chicken breast fillets with it.
- Cook the chicken breast fillets in the Airfry & Steam 700 at 200 degrees for approx. 15-20 minutes (depending on the size of the fillets).
- Cut the mozzarella into slices and spread over the chicken breast fillets. Cook in the air fryer for a further 2-3 minutes until the mozzarella has melted nicely.
Recipe idea: Autumn tarte flambée with pumpkin and feta
With the CASO professional party pan, this autumnal tarte flambée is perfect - crispy, quick and easy to prepare!
Ingredients:
- Ready-made tarte flambée dough
1 cup of sour cream
150 g feta cheese
pumpkin
Red onions
Pumpkin seeds
Salt & pepper
And it's as simple as this:
- Cut the pumpkin into thin slices and fry in the CASO professional party pan with a little oil, salt and pepper on both sides until golden brown. Then remove the pumpkin and set aside.
- Wipe the remaining oil from the party pan and briefly fry the pumpkin seeds in it until they are lightly browned.
- Place the sour cream and feta in the food processor and blend briefly until creamy.
- Toast the tarte flambée dough in a party pan over a medium heat without oil on both sides until it is slightly crispy.
- Spread the toasted dough with the sour cream and top with pumpkin wedges, red onions and the toasted pumpkin seeds.
- Cover and cook on a low heat for a few minutes until everything is nice and warm and the tarte flambée is perfectly cooked.
Recipe idea: Pumpkin soup with roasted halloumi
Ingredients (for 2-3 portions):
- 1 small Hokkaido pumpkin
- 2 red onions
- 1 garlic bulb
- 200 g halloumi cheese
- 4 tbsp olive oil
- 200 g crème fraîche
- 600 ml vegetable stock
- Salt and pepper
- Optional: chili flakes
Preparation:
- Halve the pumpkin, remove the seeds and cut into approx. 1-2 cm cubes.
- Peel and halve the onions and cut into thin slices.
- Cut the top off the garlic bulb. Cut the halloumi into 1 cm cubes.
- Spread the pumpkin on a baking tray lined with baking paper, place the onions and halloumi next to it and place the garlic bulb in the middle.
- Drizzle everything with olive oil, season with salt and bake in a preheated oven at 200°C for approx. 20-25 minutes.
- Then place the pumpkin, onions, vegetable stock and crème fraîche in a blender. Squeeze the garlic out of the bulb and add to the mixture.
- Blend until creamy. If the soup is too thick, add a little more vegetable stock.
- Serve the soup in plates and top with the halloumi cubes.
Tip: Refine with chili flakes for extra heat!
Recipe idea: Pumpkin focaccia

- 500 g type 550 flour
- 300 ml lukewarm water
- 20 g yeast
- 1 tbsp salt
- 1 tsp sugar
- 25 ml olive oil
- pumpkin slices
- ½ red onion
- Seeds of your choice
- pepper
- salt
And it's as simple as this:
- Place the lukewarm water, yeast, salt and sugar in a large bowl and mix well until the yeast has dissolved.
- Add the remaining ingredients and knead into a smooth dough using a food processor on speed 2 with the dough hook.
- Leave the dough to rest for at least 1.5 hours, folding a little from time to time.
- Once the dough has risen well, preheat the oven to 270 degrees using a pizza stone.
- Stretch the dough slightly on baking paper as shown in the video and top to taste.
- Bake the focaccia at 270 degrees for approx. 15 minutes, then set the oven to 210 degrees and bake for a further 10 minutes.
