Recipe idea: Neapolitan pizza with PizzaChef 400°
Ingredients for 6 pizzas:
for the dough:
- 500 ml ice water
- 25 g salt
- 1.5 g yeast
- 850 g flour
Topping:
- 1 tin of San Marzano tomatoes D.O.P.
- 3 mozzarella balls
- olive oil (extra virgin)
- fresh basil
- oregano
Preparation:
- Dough: Knead the ingredients in a wooden tub, bowl or machine until a smooth dough is formed. It is important that the dough does not reach more than 24 °C.
- Cover and leave to rest at room temperature for 1-2 hours.
- Divide the dough into 200 g portions and round tightly.
- Cover and leave to rest for 5-6 hours at 23-25°C until they have doubled in size.
- Done: Top the pizza with the ingredients and bake for approx. 90 seconds.
