Compact and flexible

The SV 400 sous vide cooker from CASO Design is perfect for sous vide cooking, preparing yogurt, heating baby food in a jar or tempering chocolate coating in a water bath. These and many other preparations can be carried out with the waterproof appliance, which is tested to IPX7 standard. This sous vide cooker can be used in all heat-resistant containers with a height of at least 16 centimetres and a capacity of up to 20 liters, making it the perfect choice for all amateur chefs. Simply set the temperature and time on the easy-to-read LED display and you're ready to go. Thanks to the practical screw cap, the appliance sits securely on the edge of the pot and does not slip during operation. After cooking, the compact dimensions mean that the rod can be stored in a drawer or cupboard to save space and is therefore always ready to hand when the next sous vide dish is ready.

The video shows how to prepare a steak sous vide and serve it with sweet potato puree.

Recipe idea: Sous-vide beef fillets with sweet potato puree and lime salsa

Ingredients:

For the beef fillets:

  • 2 beef fillets
  • 4-5 sprigs of thyme
  • olive oil

For the sweet potato puree:

  • 1 large sweet potato
  • Handful of basil
  • Handful of coriander
  • Zest of 2 limes
  • Juice of 1/2 lime
  • 2 cloves of garlic
  • 30 g butter

Preparation:

For the beef fillets:

  • Wrap the thyme in baking paper and place in a vacuum bag with the fillets. Add the olive oil, vacuum and seal.
  • Set the sous vide stick to 54°C and place the bag in the water bath. For a medium-well result, cook the fillets for 1-1.5 hours.
  • Remove the fillets from the bag, pat dry and sear in butter with garlic and thyme.

For the sweet potato puree:

  • Cut the sweet potato in half, place on a baking tray and season with olive oil, salt and pepper. Bake at 200°C for 30 minutes.
  • Remove the skin and mash the sweet potato into a puree. Season to taste with salt, pepper and nutmeg.

For the lime salsa:

  • Chop the basil, coriander and garlic. Mix with olive oil, lime zest and lime juice.

Serve:

Serve the beef fillets with the sweet potato puree and lime salsa and enjoy!
