Meat:
- Beef, lamb, pork, game:
Rare: 49°C | Medium: 56°C | Well Done: 60-65°C - Chicken, duck, turkey:
Medium: 60-63°C | Duck Medium Rare: 56.5°C
Fish:
- Glassy: 40°C
- Fork tender: 40-45°C
- Firm: 42-52°C

Preparation times:
- Fillet (beef/lamb):
25 mm thickness | 1-4 hrs. - Pork fillet:
38 mm thickness | 1.5-8 hrs. - Chicken breast:
50 mm thickness | 45 min-4 hrs. - Fish (sole / halibut):
12.5 mm thickness | 15-45 min. - Soft fruit (mango, strawberries):
84°C | 30 min.-1 hr.
Tips:
- Preparation: Place food (at fridge temperature) in a zip or vacuum bag, add herbs or marinade if necessary.
- Vacuum seal: Seal the bag airtight.
- Sous Vide cooker: Cook bags in the CASO Design SV 900 at a constant temperature and water circulation.
- Timer settings: Cook the food according to the time specified in the table. The appliance signals as soon as the temperature is reached.
- Finish: After the cooking time, remove the product from the bag, dry and fry briefly in a very hot pan or on the grill to create roasted flavors.
- Season with salt and pepper and enjoy.
