Perfect preparation with the CASO Espresso Gourmet Crema
1. Preparation
Before starting, make sure that the appliance, the accessories and the coffee grinder (not included) are clean. Fill the water tank with fresh, cold drinking water and switch the appliance on. Place cups or glasses on the cup plate so that they are preheated. Use fresh espresso beans and a suitable coffee grinder such as the CASO BaristaChef Inox for grinding.


2. Grinding process and degree of grinding
- Only grind as many beans as you need, as ground coffee quickly loses its aroma.
- We recommend 7 g of ground coffee for an espresso (20-30 ml) and around 14 g for a double espresso (40-60 ml).
- Choose a fine grind: too fine will make the espresso bitter, too coarse will make it sour.
3. Preheating
Carry out an empty extraction by clamping the portafilter and pressing the “Coffee” button without coffee powder. This will optimally preheat the machine and the cups.
4. Distribute and tamp the coffee powder
- Distribute the powder evenly in the portafilter, remove excess powder and tap the portafilter lightly.
- Tamp the powder with approx. 15 kg of pressure to ensure even extraction.
5. Double-walled sieve inserts
The double-walled sieves make preparation easier: even with coarser coffee powder, optimum brewing pressure is generated, resulting in a rich crema.

6. Obtain espresso
Clamp the portafilter and press the 'Coffee' button to start the brewing process. Make sure that the amount of water suits your taste.
7. Customizable amount of water
Individual quantities can be set by long or short pressing the 'Coffee' button - ideal for espresso or caffè doppio.
8. Prepare milk foam
- Use chilled milk or suitable plant-based drinks.
- Place the steam lance just below the surface of the milk and allow the air to flow in during the 'drawing phase'.
- For the 'rolling phase', lower the steam lance to swirl up the milk.
9. Cleaning the steam lance
After frothing, immediately clean the steam wand with a damp cloth to remove any milk residue.
10. Enjoy your espresso
