Everything you need for the perfect start

Recipe idea: Speculoos crêpes with cinnamon apples by vonjanuarbisdezember
Ingredients:
For the sous vide cinnamon apples:
- 4-5 apples, peeled and cut into wedges (4 pieces are sufficient for large apples)
- 1 tbsp lemon juice
- 1 tsp cinnamon
- 50 g sugar
For 12 crêpes:
- 300 g wheat flour, type 405
- 3 tsp speculoos spice
- 1 large pinch of salt
- 3 tbsp sugar
- 3 eggs
- 600 ml whole milk
For the topping:
- Seeds from ½ pomegranate
- 200 - 250 g Lotus Biscoff cream (I used crunchy) - warmed over a water bath

Preparation:
For the sous vide cinnamon apples:
- Place all the ingredients in the foil bag and vacuum seal using a vacuum sealer
- Place the sous vide stick in a sous vide basin or pot and select the settings 80°C and 1 hour on the display. In the case of a sous vide basin, put the lid on
- As soon as 80°C is reached, place the apple bag in the basin - it must be completely covered by water - then put the lid back on
- After 60 minutes, a signal sounds - then remove the bag from the basin and pour the contents into a bowl
Meanwhile, prepare the crêpes:
- In a bowl, mix the flour, sugar, salt and speculoos with a whisk
- First add the eggs and then gradually add the milk and whisk the batter until smooth - all lumps should be removed
- Preheat the crêpes maker to level 5 - as soon as the green light comes on, pour a ladle of batter onto the crêpes maker and quickly spread out an even crêpe using the batter spreader. As soon as the underside is golden brown, turn the crêpes to the other side with the turner provided and bake this side until golden brown too
- Keep the finished crêpes warm in the oven at 50-70°C until ready to serve
Serve:
- When all the crêpes are cooked through, roll them up and serve with the cinnamon apples, melted Lotus Biscoff cream and pomegranate seeds
