Fluffy & soft pumpkin cinnamon buns made from yeast dough - the perfect pastry for autumn.
For the dough:
20g fresh yeast
200 ml milk
60 g sugar
75 g butter
100 g pumpkin puree
1 pinch pumpkin spice
1/2 tsp cinnamon
1 pinch salt
600 g flour
For the filling:
125 g soft butter
175 g brown sugar
2 tsp cinnamon
1 tsp pumpkin spice
How to prepare:
Warm the milk up to 37 degrees, stir in the yeast and sugar and let it rest for 10 minutes.
Melt the butter and add the remaining ingredients for the dough to the bowl of the kitchen machine. Add the yeast mixture and mix everything with the dough hooks until a smooth dough is made.
Cover the dough and let it rise in a warm place for an hour.
Briefly knead the dough again with your hands, divide it into two parts (for smaller cinnamon buns) and roll out the first half into a rectangle.
Brush with the softened butter. Mix the sugar and spices and sprinkle it evenly all over the dough.
Roll up from the longer side and cut into evenly sized rolls.
Place the rolls in a small baking dish and bake for 10-12 minutes at 170°C in a hot air fryer (great for smaller portions)
