Veggie Hot Dogs selber machen – Rezept und Anleitung (mindofapineapple.de)

Hot dog rolls

Ingredients for 6-8 pieces:

  • 380g flour
  • 45g sugar
  • 3g salt
  • 80g water, boil
  • 200g soya milk
  • 7g instant yeast
  • 60g butter, vegan
  • 1 tbsp maple syrup + 1 tbsp soya milk for the glaze

Preparation:

  1. In a small bowl, mix the warm -not hot- soya milk with the yeast and sugar.
  2. Now make the rest of the dough using a food processor and the dough hook.
  3. Place the flour and salt in a large mixing bowl, add the hot water and knead on a low setting.
  4. Then add the soya milk and yeast mixture. Knead everything together to form a dough.
  5. Add the butter at room temperature to the dough and knead everything together until you have an elastic dough that no longer sticks.
  6. Cover the dough and leave to rise until it has doubled in size (approx. 40 minutes).
  7. After the dough has risen, divide it into 6-8 equal pieces, fold and stretch each piece.
  8. After stretching, shape the dough pieces into small balls and then roll them into long buns. Leave the hot dog buns to rest on the baking tray for another 30 minutes.
  9. During this time, preheat the oven to 205°C. Finally, mix the maple syrup and soya milk together in a small bowl and brush the hot dog buns with the mixture.

Red Cabbage cole slaw/relish

Ingredients:

  • 300g red cabbage
  • 1 onion, small
  • 4 carrots, small
  • 200 g mayonnaise, vegan
  • 1 tbsp apple cider vinegar
  • 1 tbsp agave syrup
  • 1 tbsp mustard
  • 1 organic lemon, juice + zest
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

Preparation:

  1. First chop the red cabbage, onions and carrots in a food processor.
  2. Add the spices and chop to the desired consistency.
  3. Stir everything again with a spoon and serve with the hot dogs.

Veggie hot dog sausages

Ingredients for 8 pieces:

  • 200g white beans
  • 60g walnuts
  • 2 tbsp onion powder
  • 2 tsp paprika powder, smoked
  • 1 tsp ground cumin
  • 1 tsp thyme
  • 1/2 tsp fennel seeds
  • 1 pinch cayenne pepper
  • 1 pinch of salt
  • 1 tbsp sunflower oil
  • 2 tbsp soy sauce
  • 1 1/2 tbsp tomato paste
  • 2 garlic cloves
  • 250 ml vegan meat stock
  • 150g seitan fix
  • Alginate casings (suitable for steaming/roasting)

Preparation:

  1. Firstly, place everything except the seitan fix and the vegan meat stock in a bowl. Pass the contents of the bowl through the medium-fine meat grinder attachment of a food processor.
  2. Now add the vegan stock and seitan fix to the minced mixture and pass everything through the mincer again with the medium-fine attachment.
  3. Then replace the medium-fine attachment with a fine attachment. To make sausage, it is now necessary to attach the stuffing tube to the food processor mincer. Choose the right stuffing tube depending on the casing.
  4. Put the sausage mixture back into the mincer and prepare the alginate casing by pushing it onto the filling tube. Now run the food processor on speed 1-2 and fill the casing with the mixture.
  5. Make a long sausage, making sure that the sausage is not overfilled at the end. Twist off individual sausages from the one long sausage at the desired distance.
  6. Steam the sausages over a bain-marie for approx. 60 mins. Then fry and enjoy in a hot dog or on their own.
