Video transcription

The video shows a recipe for zucchini pesto. First, zucchini is chopped and placed in a food processor. Then, oil is added, and the food processor is assembled. After the zucchini is processed, pine nuts and cheese are added. The pesto is then served with pasta and tomatoes.

Spaghetti with pesto, tomatoes, pine nuts, and cheese on a black plate

Recipe idea: Homemade courgette pesto

 

Ingredients:

  • 2 courgettes
  • 40 g pine nuts
  • 1 handful of basil
  • 2 cloves of garlic
  • 1/2 tsp sea salt (coarse)
  • 150 ml olive oil
  • 50 g parmesan

 

Preparation:

  1. Firstly, wash and roughly chop the courgettes, peel the garlic and finely grate the Parmesan.
  2. Toast the pine nuts in a frying pan without oil until golden brown.
  3. Chop the courgette, garlic, sea salt and oil into a paste using a food chopper.
  4. Then add the pine nuts and basil and chop briefly.
  5. Then stir in the Parmesan (do not chop any more).
  6. Serve with cooked spaghetti and halved cherry tomatoes, if desired.
