Recipe idea: Pumpkin Vegetable Cream Soup
Ingredients for 3 servings:
- 1 butternut squash (peeled, seeded, halved)
- 3 large tomatoes
- 1 zucchini
- 1 orange bell pepper
- 1 red onion
- 1 head of garlic
- 200–300 ml vegetable broth (depending on desired consistency)
- 200 g heavy cream
- 1 tsp sweet paprika powder
- 1 tsp curry powder
- salt & pepper
- 4–5 tbsp olive oil
- basil & chili flakes for serving
Preparation:
- Preparation: Preheat the oven to 200 °C (top/bottom heat). Halve the tomatoes. Cut the zucchini into slices about 2 cm thick. Remove the seeds from the bell pepper and quarter it. Peel the onion and cut into eighths. Cut off the “top” of the garlic bulb so the cloves are exposed. Place everything on a baking sheet (lined with parchment paper) together with the squash, drizzle with olive oil and season with salt.
- Roasting: Roast the vegetables for about 50 minutes until everything is soft.
- Blending: Place the roasted vegetables into the B 1800 PowerBlender (squeeze the garlic out of its skin), add the broth and blend until silky smooth.
- Finishing: Pour the soup into a pot, season with curry powder, sweet paprika, salt & pepper. Stir in the heavy cream (reserve 2 tbsp for garnish) and briefly bring to a simmer (adjust consistency with more broth if needed).
- Serving: Pour into bowls, top with the reserved 2 tbsp cream, basil & chili flakes. Enjoy with fresh bread/ciabatta.
